Jarretes de Ternasco Del Moncayo con Setas

TERNASCO DEL MONCAYO JARRETES WITH MUSHROOMS

Ingredients:

  1. Ternasco del Moncayo Garretes
  2. Virgin Olive Oil
  3. Parsley
  4. Laurel
  5. Salt
  6. Cognac
  7. White wine
  8. Carrot
  9. Leek
  10. Garlic
  11. Celery
  12. Onion
  13. Moncayo mushrooms
  14. Chicken broth

Elaboration:

The jarretes are fried in virgin olive oil, previously floured and with a pinch of salt. Add chicken broth, parsley and bay leaf, cognac and white wine.

Next, a refrito is made with carrot, leek, onion, two cloves of garlic and mushrooms. When the refrito is done, it is passed through the mixer with a little broth and made in the jars, letting it boil for half an hour.

Plating:

It is presented on a plate accompanied by mushrooms.
