Jarrete de Ternasco Del Moncayo Escabechado y Caramelizado

TERNASCO DEL MONCAYO SHANK PICKLED AND CARAMELIZED

Ingredients:

  1. Jarrete de Ternasco del Moncayo
  2. Cardamom pepper
  3. Thyme
  4. Cinnamon
  5. Raspberry vinegar
  6. Sugar
  7. Peeled sunflower seeds
  8. Salt

Ingredients for vinaigrette:

  1. Onion from Fuentes de Ebro
  2. Strawberries
  3. Avocado
  4. Extra Virgin Olive Oil "Sierra del Moncayo"
  5. Raspberry vinegar
  6. Sherry vinegar

Elaboration:

Season the jarrete and then cook it with spices and raspberry vinegar.

Once cooked, let it rest.

We will take advantage of the cooking water to assemble the caramel.

Plating:

Cover the jarrete with peeled pipes and decorate with vinaigrette.
