TERNASCO DEL MONCAYO SHANK PICKLED AND CARAMELIZED
Ingredients:
- Jarrete de Ternasco del Moncayo
- Cardamom pepper
- Thyme
- Cinnamon
- Raspberry vinegar
- Sugar
- Peeled sunflower seeds
- Salt
Ingredients for vinaigrette:
- Onion from Fuentes de Ebro
- Strawberries
- Avocado
- Extra Virgin Olive Oil "Sierra del Moncayo"
- Raspberry vinegar
- Sherry vinegar
Elaboration:
Season the jarrete and then cook it with spices and raspberry vinegar.
Once cooked, let it rest.
We will take advantage of the cooking water to assemble the caramel.
Plating:
Cover the jarrete with peeled pipes and decorate with vinaigrette.
